Unit Standard 19769 – Prepare and present basic hot and cold dishes
Unit Standard 15892 – Demonstrate knowledge of terminology used in commercial kitchens

This course explores the incredible flavours of South American cuisine, including dishes such as ceviche, arepas, empanadas, chimichurri, and Brazilian street food. Ākonga will:

  • Learn foundational kitchen skills and safe food-handling

     
  • Explore essential culinary terminology and commercial kitchen language

     
  • Experiment with regional ingredients and cooking methods

     
  • Develop a menu as a class and run a small restaurant service as part of the final assessment

     
  • Build confidence in timing, plating, teamwork, and kitchen communication

Course Overview:
This course explores the flavours, ingredients, and traditions of South American cuisine. Ākonga will develop foundation-level culinary skills while preparing dishes such as ceviche, arepas, empanadas, and chimichurri. The course concludes with ākaong designing a menu and running a small restaurant-style service.
