45HOS – Chocolatier Course

(Non-NCEA / Skills-Based Course)

Enter the world of professional chocolate creation. This course covers the full journey from cacao bean to finished product, including:

  • Understanding cacao and flavour origins

     
  • Tempering chocolate to achieve shine, snap, and smooth texture

     
  • Developing your own chocolate brand — logos, wrappers, packaging

     
  • Crafting chocolate bars, filled chocolates, truffles, and creative flavour blends

     
  • Making real hot chocolate from scratch

     
  • Exploring ethical and sustainable chocolate production

     

Ākonga will create a curated collection of chocolates to present in a final showcase.

Course Overview:
A creative and technical course exploring the craft of chocolate-making. Ākonga will temper chocolate, create flavour blends, design their own brand and packaging, and make a range of chocolate products including slabs, filled chocolates, and real hot chocolate. Ethical cacao sourcing and sustainable production are emphasised.
